It's going to be a gas leak/flood/fire/tornado etc.

I suppose the question you want to ask yourself jreilly is what disasters are you most likely to encounter. All I can tell from you is that you're in the US and that is a whole galaxy of different preparedness needs. So what's your concern, what is going to hit you?
Living in California... a sweatshirt and some sunscreen should cover you year-round.
But seriously, if you're thinking wilderness survival, there are a few items to consider. For one, there's the rule of 3's. You can live 3 minutes without air, 3 days without water, 3 weeks without food. You can also freeze to death in severe cold weather. So learn to swim, have water bottles and some way of purifying water, you don't really need much food, and you need clothing appropriate for whatever weather conditions you might experience. A quality down jacket, warm pants, and some sort of rain coat can get you through most anything that isn't too far below freezing. Heavy rain might require some sort of shelter. Don't wear cotton, ever. Cotton gets wet, you get cold, you freeze to death. Wool and non-cotton athletic clothing are ideal, though synthetic clothing melts which can cause severe injury so avoid it if fire is a concern.
There's also the 10 essentials: Knife, map, compass, firestarter, sunglasses/sunscreen, light source, first aid kit, extra clothing, extra food, water, etc. Despite being called the 10 essentials, there really isn't a definitive list. Some of the items are less essential than others. After many, many, many years of backpacking, I've yet to use a knife for anything beyond eating food. Sunscreen is really only necessary if you don't have protective clothing and don't spend much time outdoors (no, cancer isn't an issue, you only increase your risk of cancer if you get sunburned, not simply from being out in the sun. Sunscreen is great at protecting you from getting sunburned, but if you're already tan then you don't really have anything to worry about). Unless you're hiking over snow, sunglasses are optional (snow glare can literally be blinding, don't mess around with that. I lost my sunglasses on one backpacking trip and spent the rest of it walking with at least one eye closed when we hit the snowy passes).
Once you learn a few things about surviving outdoors, the good news is you can be fairly comfortable with very little equipment. Food, warm clothing, and a sleeping bag/shelter takes up most of the bulk of backpacking gear. Everything else you could possibly need to survive in the wild easily fits in a small camelpak. But a flabby couch potato can consume an amazing amount of media (TV/Netflix/Film/Music). Once you can marathon House of Cards the rest of the dominoes should fall like a house of cards. Checkmate.

As a pretty fit individual, I'll say I'm not to shabby at marathoning tv shows myself. Work tends to get in the way, though.

All this bag talk reminds me that I need to work on my "deployment bag" this month.
I'm on the Medical Response Team at work and we are getting ready to go on our 2-month on-call rotation. So if we get called up we have to be ready to leave in 24 hours, so I try to keep a bag ready to go.
I've used my spare carry-on suitcase in the past since the likelihood of actually having to rough it anywhere is pretty low, but I was wondering if the military folks have any recommendation for a duffle bag or backbacks that would be carry-on compliant.

Well, I live in the Midwest, so it's tough to say, but the things I'd be most concerned about would be either a blizzard or some sort of civil unrest. Tornadoes almost never happen (maybe once in 20 years), too high up for floods, and earthquakes are also not that common.
Panic Room with plenty of supplies and three "emergency bags" in case of being forced to suddenly leave the house. I don't see any downside in owning any of those so can just recommend it to everyone. But...ye, 100$ is a rip-off.
You don't need a can opener to open any can. You only need a hard flattish surface. You simply rub the top of the can on a rock or cement for a few minutes and the can top will come right off. I've done this technique several times while camping and it works a treat.

I'd have to pack about 12 liters of dialysis supply per day I expected to be "off the grid" along with a lot of accessories for the system and a first aid kit that includes lots of antibiotics and medications. So before I even get into the beans and dried beef stuff I've got a serious load.
I figure if life as we know it ends I've got around a months worth of supplies in the apartment. After that I'm screwed.
