I fully agree. I think TWC is over the top and excessively silly. But that ship has sailed. So if someone wants to do it, more power to them. And I’ve seen it done well in a number of places. Enough fluff justification plus rule of cool means I’ll accept it.

If you can put a space marine on a bike, I don't see why you would even blink at them riding some beast - horse, giant wolves, dewbacks, dragons, etc.
Perhaps, Grey Knights should have some sort of kangaroo to go with the Dread Knight?

Yep, agreed. And I think that if you put Grey Knights on Kangaroos (or anybody on Kangaroos for that matter), every Australian (incl. myself) would start collecting that army! hahaha

Back on topic: As everyone is saying - Rule of Cool. But from my experience with trying to add and/or mess with the fluff (which I've buggered up more often than not haha), I'd be careful with this. That being said, if it's a DIY Chapter or a minor Chapter, then there's a lot more flexibility.

Well, my internet search was disappointing... there are no space marines riding squigs.
There is an adorable Squig in Ultramarine armour... but no Squiglymarine cavalry.
Someone should go make one for future reference.

That’s fair. To be honest some of the UM fluff is a bit much as well. But a lot of that can be written off as the exaggeration of propaganda. How grim/silly/over the top any faction is depends a lot on who’s writing for them at the moment. Space Wolves used to be psudo-vikings in space before the wolf got cranked up to 11. Ultras were just the average joe marine until Ward made them the "bestest ever at everything!" chapter.
One of the problems with playing for a long time is the periodic “They did what to my faction!?” facepalm moments.
Which is why I’m glad most people are open to the idea of loose headcannon and flexible fluff. Make up something that mostly fits, stay internally consistent, and have fun. Your minis, do what you want, have fun with it.

I'd be fine with thunderwolves provided that it wasn't just wolves every time all of the time, that the rest of the Imperium viewed this as a suspect deviation of standard tactics and that the riders were armed with ranged weapons instead of being fantasy cavalry in space.
Using a giant monster both to haul yourself into a good position for launching some missiles and as a close-range defence would be all right enough with me. Using cyber-beasts as attack bike replacements meshes nicely with the technobarbarian angle. The exact model matters too, of course. I'd like to see more than just a gakky little saddle on there. Armour and a proper attachment system for a power armoured dude would be good.

Power to weight ratios, for one.
Range.
Logistics.
The ability to abandon them and retrieve without issue.

In fairness they have some ranged weapons and considering the rest of the setting I don't see them being cqc focussed is that unrealistic.
As for the Imperiums view of them Thunderwolves officially don't exist so the Imperium at large doesn't know much about them.

Nah, pub is 2 blocks away - takes longer to saddle the bugger than it takes to just walk it (3 minutes).
I don't do bbq. Too many flies, and MY kitchen is air-conditioned. I leave the burning of meat outdoors to knuckle draggers.  I'm more a slow-cook or saute kind guy, tbh.
As for the Drop bears: Look UP and LIVE.

Space Wolves riding Cyberbears would be a nice change of pace. And why don't we see the sons of Lion El'Johnson riding giant lions, saber-toothed cats or somesuch He-Man style. Or White Scars on giant eagles instead of jet-pack Jump troops?
