Don't worry, it happened to me more times than I can recount as well. It's not like there were any less SM players back then, though, IG, Inquisition, and I think even squats could use the imperial assassins. It forced me to center strategies around not having any troops anywhere near valuable units.
The other OP unit I remember was the decked out eldar exarch. Once the 2nd Ed. Eldar codex came out you could create an eldar exarch with a brighlance, warp spider jump generator, and armor piercing ammo. That thing could crack any vehicle wide open. I played a game where one of these things took down an (armorcast) warhound titan, while the Phoenix lord Fugen took down an (armorcast) reiver with his 'fire ax'. Apocalypse games back then were quite unbalanced and time consuming to play, but always a good time.

I think you are misremembering
Polymorphine wargear card had restrictions on armour saves and no heavy weapons/vehicle crewmen, so no terminators. Also any equipment to model carried was dropped in favour of the assassins weapons.

Yup! I distinctly remember the issue of white dwarf where Andy Chambers did an FAQ (may have been the first one ever), and he slammed the nerf hammer on it. You definitely couldn't use vehicle crew, and I think the heavy weapon part is right also.
You were unable to remove a model with a heavy weapon, but not all terminators had heavy weapons. Back then all they had were assault cannons and Cyclone launchers, but you needed to have 5 terminators in a squad to use those. Later, either from the FAQ, or when the released the 2nd Ed. Assassin's codex, the Calidus assassin's card specifically stated the armor save had to be under a certain value to use plymorphine (which I have been mistakenly referring to as 'camoline'...).

Before the Temple assassins were introduced, there was just the Assassin from the Imperial Agents list in the Codex Imperialis booklet. That guy could take any wargear he liked - Terminator armour, a bike, Vortex grenades, combi-weapons, ...
You're right that when an Assassin using Polymorphine revealed himself, he discarded the wargear that the disguise had, but he usually had plenty of his own anyway.
There was one battle report - Space Wolves vs Eldar, IIRC - where an Assassin was used. Just the Space Wolves player looking at the Howling Banshees near to the Farseer was enough to get the Eldar player moving them away. Eventually, the Assassin revealed himself as a Warp Spider (causing the three remaining Eldar to fail a panic test!) and spent most of the rest of the game fighting an Eldar Dreadnought in close combat while hopped up on combat stimulants.

The Bunker Assault BatRep was a lot of fun. Bjorn ended up armless in combat with a Farseer and a Warlock!
The Assassin from those Battle Reports eventually became the basis for the Eversor Assassin (Combi-Weapon, Power Sword, Meltabombs, Combat Drugs).

There's no way they're removing Celestine from the game, especially seeing as all the other Sister models are still in production. The only reason they would remove Celestine and no other Sister models is because they're either
a) retooling Celestine in finecast
b) doing a new Celestine in plastic
for an upcoming Codex.

To be fair, Apocalypse games were never really intended to be balanced. They were the original "unbound" rules. Field what you want regardless of points and have fun. Anything beyond that was house rules. (Which we used several times!)

Yeah, because GW has never removed a model/rules from a game without replacing them with something else...
Also, I just noticed that Assassinorum Execution Force is in the "Last Chance to Buy" section!

a) "Finecast" Celestine is a given.
b) No way Celestine goes plastic, given that all of the armies that actually sell models got SCs in plastic, but the new Caness is resin.
No way Sisters get a separate Codex from Imperial Agents. C: IA is the new Sisters Codex.

On the bright side the C: IA has saved me close to $200 CAD lol

Our Made to Order service has already brought back dozens of Warhammer 40,000 miniatures, and soon, Warhammer Age of Sigmar will get its turn.
So we want to know: what would you like to see?
We’re looking for suggestions for any older models for factions within the Grand Alliance: Order book - Aelfs, Free Peoples, Seraphon, Sylvaneth, Duardin - whatever. If there are any models for those armies that are out of production, but you would still like to add to your force, let us know, and we’ll see what we can do.

Judging by the text accompanying the picture, Bretonnians aren't included!! And Tomb Kings, I assume, would fall under the Death category! However, I'm sure if enough people asked from some of the old Bret character models they'd drop a few of them!
