I hate Tau, Eldar and space wolves equally. If I had to play one though at least I could grit my teeth and play the wolves because at least they are similar to things I like, but eldar and tau?...
Well I do have and enjoy dark eldar so I guess I could just pretend my eldar are really evil bastards who don't shop at hot topic so I guess the #1 pick of things I'd hate to play would be Tau.

Modern Death Guard, and I'd be converting a lot of stuff to look pre-heresy just because I loathe the nurgle theme and can't stand to paint it. Too much time spent in hospitals as a kid.
I don't mind fighting against it, but I wouldn't want to sit there and paint it myself.

Ugh. Slaanesh Demons.
I would say Tau because I hate those gimpy fish heads, but I'm actually thinking they might be a nice change. Tau auxiliary sounds pretty neat from a modelling perspective, plus I do kinda like Broadsides and some of the other suits. So I can't really say Tau. The only faction I would really dislike building a Slaanesh army of any type because it would offend my true liege, Khorne. Or I guess I could just choose death. Khorne would approve.

Love playing but would never consent to paint an army of Orks. Just way too many fiddly bits to paint.
Look interesting but could never imagine playing as Knights. I don’t find them fun to play against, as an entire army. Centrepiece is ok, but not a whole army of them.

40k is sci fi More precisely, science fantasy. That said, it's still distinct for D&D or Tolkienesque fantasy. The thing is, the otherwise generic fantasy daemons don't have the "in space" dress-up on, and such feel out of place and really boring.
To top it off, they're a mass-melee footslogging army, which is basically the straight opposite of everything I would ever want to play.
Here's the thing I don't think you're seeing. Daemons and the Warp are effectively the reason 40K isn't sci-fi. The reason you don't like them is the very reason 40K is unique and interesting as a setting. They are what makes it 40K. You don't see the as fitting in because you think 40K is sci-fi, when it's totally the opposite.
I'm not going to argue the aesthetics of the models because I think that they're lacking for the most part, but they are the essence of 40K.

It'd be either straight nids (dull, personality free horde designed half by what a ten year old thought was "awethome" and half by someone throwing random darts at a dartboard) or Custodes (the ten year old but designing his hero character in an MMO and writing awful fanfic about how badass he is)
At least with Custodes they'd only take 10m to paint. Once you spray paint them gold there's no point continuing. I wouldn't want to add a wash to pick out any of the hideous detailing on the models. Spray gold...then probably spray again and again until they look like pvt Dickard.

I can't decide between Imperial Knights and Harlequins. I have nothing against the odd Imperial Knight in a big points game that's limited to one Lord of War each, but Knights as a faction? Rubbish.
I can't quite put my finger on why, but there's just something really unappealing to me about Harlequins.
If I had to decide, I'd have to go with Knights, because though I don't like Harlequins, I do respect them at least. I cannot say the same for Imperial Knights nor those who play them.

For 40k I guess that'd be Dark Eldar - but only if I were forced to use the original models from 3e.
Excluding the skiffs & the two slave girls, I just can't stand the original DE model sculpts.

There really isn't an army in this game that I totally despise. But as for least favorite as far as wanting to play, it would be Necrons, Craftworld Aeldari, or Orks. Or even possibly Blood Angels. With Necrons, they seem boring as hell to paint and even worse to play. With Eldar, they might be interesting to paint and collect, but I don't feel like I would enjoy playing them. With Orks, converting and stuff would be a blast and they got some awesome new models recently, but I can't see forcing myself to paint 100+ Boyz and probably as many Grots. Doing half that many Chaos Cultists was bad enough! As for the Blood Angels, they are my least favorite Space Marines with their own book. They just don't interest me at all.

Tau don't really have an "Anime" aesthetic so much as its inspired by feudal Japanese armor.
Granted anime is a product of Japanese culture so it draws from the same influences. Still while Space Marines might be European knights in space, the Tau are basically feudal Japan in space (somewhere in the process they forgot what a Yari is but oh well). I will also argue that none of the Tau suits are as anime as the Eldar Wraithknight which looks very close to the mecha in Evangelion.
Speaking of Eldar, those panzy gitz are the ones I would hate to play the most but if I had to i would probably field an army of Wraithguard. At least all the Eldar in the army would already be dead.

Everything else went through the effort to dress up to be "In Space!", though, but the Daemons didn't. They really stick out like a sore thumb. [Also, there are quite a few "sci fi" factions, and I'd pretty easily say that the Necrons, Tau, Tyranids, and Imperial Guard are far more appealing than the Daemons, Orks, or Eldar]
Second, I'd argue that the Warp and daemons aren't actually very important to making 40k unique or interesting. 40k is unique, fun, and interesting because the Imperium is a fascist theocracy. The forces of Chaos, and enemies of the Imperium in general, are just kind of there; because fundamentally, the Imperium is so monumentally gakky because of its own policies.While the soldiers are still heroic holding off their foes, the cause of their suffering is the Imperium itself. [And, if it strays too far from this, it stops being a criticism of fascism and starts being just fascist. Sometimes, I feel like it crosses the line, especially 30k]
Eldar are my second least favorite faction.

One of those tournament-winning Imperial hodgepodge lists that takes a Castellan or two, surrounds it with redshirt guardsmen and then throws in some Custodes or a random Blood Angels captain for no narratively-sound reason. Basically, armies built like MTG decks, where angels and demons go hand in hand and have a threesome with a giant squid because their rules synergise so well.

Nurgle daemons - I just hate the aesthetic and couldn't stand the painting. Which is a shame as I really enjoy collecting and using horde armies and they're currently one of the best

I like all the armies in 40k unfortunately. It's a dangerous world for me and my whimpering wallet.
In terms of aesthetic, it would be Deathguard. Technically great models but rank.
In terms of 'screw those guys' it would be Cadians. I am bored to death of bleedin' Cadians.

I would say Knights but they are so point and click that I could probably play them while furiously concentrating on something else and hardly notice I had done it.
So either Death Guard or Necrons. Either way they are just slow and boring and just won't die so I would be force to play right to the end of the game. Death Guard do at least have one interesting model so Necrons it is.

That and Ynnari but if i would be forced to chose then probably the IG soup since that can happen on a minescule battlefield.

If souping is allowed then this. If not then any flavor of space marine would do the trick. They're just so utterly, utterly bland to me.

Purely aesthetically, this would have to be my pick. I like the idea of undead space marines, but the bloated, tentacled and pustulent thing does nothing for me. If I was forced to do a DG force, I'd have to convert every model to be some kind of horrendous desiccated mummy with strips of peeled-off skin sloughing off their faces as they breathe.
