This will be interesting. Because im thinking about doing it for a 3rd time with some models but not all. So yeah could be some funny stories, or interesting ones if you have any to share.
So with me its 2 times with roughly 30 models, because i didn't know about priming when i first got in to game, and they were pre owned models so they were stripped when i first got them, then after not priming stripped a 2nd time. Although nothing really completely 100% completed, but still was covered entirely in paint.

I stripped a couple of figures four or five times mainly to match my evolving painting style or to fit in with another army entirely. For instance I have some of the first lot of Imperial Guard that have had arctic, jungle, desert and Martian colour schemes over the past 30 years. They are wearing out a bit now though so only one more redeployment.

A couple of times. I had a couple of old models I wanted to update that I'd painted 20 years or so ago. I've also used the Dettol Bath of Renewal on WIP models I stuffed up and wanted to redo.

Honestly not very often. Have done it with stuff I've bought second-hand, and with some stuff I've painted in my childhood (Hero Quest / Space Crusade in particular) that I wanted to re-do as an adult. Not stripped anything I've painted as an adult yet. It's taken me long enough to paint it once, generally. That said, I did make a terrible mistake with the skin on a couple of my Wyches - they need a Dettol bath now.

I have stripped a number of mini's a number of times, but I have done one single corvus beakie the most, I use it as a test bed for colour combinations so I chose 5 times

I have never stripped a mini more then once. And once is not that often.
I stripped some old BA and custom chapter marines that were just collecting dust so they could join my Ultras.
I stripped some bad fuzzy primer off some new Eldar
I stripped some bad paint off of old Eldar.
The pile of shame is already large enough without painted stuff rejoining it. Once I cut that down to a reasonable size I might consider stripping and re-doing some old paint. But “pile of shame” and “reasonable size” are never going to meet, so it’s mostly a moot point.
I have touched up old work, rather then strip and re-do. But again, that’s pretty rare. Mostly just for some aspect warriors that were painted in 2nd-3rd ed who were getting enough new members painted to be legaly fielded as squads. Not only had the original paints run out years ago, but I’d made some stylistic changes in the interim.

The vast majority of the paint stripping I do is salvaging second-hand purchases.
On rare occasions, the paint scheme for an army on the actual army miniatures does not work out as well as it does on the test models, and I have to strip them down and redo them. Fortunately, that's pretty rare for me.
I do not strip down and redo old armies. Yes, my first army - Skaven - do look pretty 'meh' compared to my newer armies. No, I'm not going to strip and repaint six thousand points of Skaven, especially not since I've got at least that many points for newer armies in bare plastic.

As with DanceOfSlaanesh I have a couple of models that I have used to test out colour schemes and one that I have used for practising painting skin tones, they have all been stripped dozens of times.

I've never had the need to strip a model as of yet. I did dig up my original terminator captain recently and the paintjob is atrocious and is probably my worst painted model. Granted it was 1991 so I dont really critique it, I just look at the other stuff from then(rtb01, chaplain, etc) and by comparison it's as if a no talent hack painted it(hey I was 11)
so when I get around to finishing my current primaris additions and the calth box it may end up in some solvent.

Does any one know if isoproyl alcohol would make gw plastic brittle or more prone to breaking if left too long or even if its a short time, does this weaken the plastic in any way?

Don't know about isopropyl, but I have stripped lots of plastic models without them becoming brittle using Simple Green. Now Simple Green claims it is non-toxic and biodegradable...but I always clean using protective gloves and glasses and do the scrubbing in a well ventilated area.
I have stripped entire armies over the years as my painting improved. One recommendation I do have is never leave any sort of cleaning/stripping agent on a model too long...keeping that rule, I have never had a plastic miniature damaged by the cleaner. I also have never left a plastic model in a cleaning agent for more than 24 hours...a little elbow grease is better than damaging expensive miniatures.

No idea about iso but denatured alcohol (methylated spirits) take the shine off the mini's leaving a matt finish not brittle either.

Isopropryl alcohol works fine and doesn't damage the plastic, I used to use it in an ultrasonic cleaner.
When I first moved to the Colonies, I had ca. 6k of both Blood Angels and Tyranids, pretty much all of which were ebay rescues that needed to be stripped..

I’ve stripped a couple of barely painted models, one that I used as a colour test for my marines and a metal daemon prince I got off eBay. About to strip an old metal venerable dreadnaught and the old metal/plastic vindicator when I get a weekend free. I’m a fan of the keep them as you painted them approach for full my painted stuff for nostalgias sake but those ones are too good and the paint job is too bad to keep them that way.

I recently got back into 40k after a 20+ year break. I’ve rejigged my units and fleshed them out with eBay purchases, some of which have arrived in desperate need of stripping and starting again, some of which have been well painted but don’t fit my army (but that always makes me feel guilty so I tend not to buy them if I can help it).
The there was my batch of plastic beaky marines. They went through about 6 layers of singing when I was a kid, including blood angels, dark angels, emperors children, neon green and ultramarines. I never stripped them between iterations so you can imagine how they looked! It was kind of fun peeling back the layers and remembering! They are now space wolves and are quite happy about it!
