Do you tend to collect just the one army that has the strongest appeal (for various of reasons) to you, or do you collect more, even all, from the available in a particular game? I am the mono army person, and always choose the single army that I like the most, usually because the fluff/look reasons. The only exception for me is possible when the game system allows some kind of allies. For example, in my 1st edition of Warzone years I was playing Mishima but as the rules allowed some percentage of main army to be formed from allied units I had also some minis from Cartel, Brotherhood and various Earth Tribes.

Many many armies.
It's very rare for me to have only 1 army for whatever minis games I'm playing.
This isn't because I'm chasing the Meta. It's not even done in order to supply an opposing army for someone to use against me.
It's generally done because there's often enough models in other factions that I also like. Since I can't usually use all the models together in 1 force.... I end up with multiple armies.
Having multiple armies also prevents me from becoming bored. After playing a force for a few months or a campaign/crusade/etc? I'll pull something else & use that for awhile.

Multiple armies. But traditionally I've been the one who has had to supply armies for other people, which is why I have nearly every army there is and enough Necromunda stuff to do multiple gangs from the same house simultaneously. And terrain for multiple tables at once. I could run a 12-14 person tournament by myself without anyone having to bring anything.

I have multiple armies for 40k and Middle-Earth, but only one for AoS, and only one gang for Necromunda. I do have two armies for a couple of other systems mainly because I bought the starters that contained 2 armies.

I would like to have only one, but my Chaos collection is growing past the point where it's not cutting it as a small patrol sized force anymore.. so, multiple armies I guess?
I blame KillTeam  Collecting small warbands is too fun

Many.
I also have the bad habit of picking up at least one opposing army in the hopes I can coerce others to play against me (for example, in Bolt Action I wanted a German army, and also built a US Army in case someone wanted to play against me).
Legion is the first wargame I've picked up where I didn't do that.

Depends on the system and at which point in time I look at.
Earlier years were loads for 40k but has now become one.
HH started with EC, added on Militia from my 40k R&H, swapped EC for IW, and recently I added Isstvan Shattered Legions.
AoS was a few that has been reduced to one.
MESBG is kind of made for doing a few different Warbands for both Good and Evil so I don't really count that.
Necromunda is one with my Chaos gang.

Multi. It’s mostly driven by models than unit choice. If I like the models, that’s enough. I have a few admech models because I liked the designs, for example, but it’s not enough for a full army. (Kill Team might motivate me to flesh them out enough for a warband-sized force.)

This is where I am, too. If I want to play a game with my family or most of my friends, I usually have to supply the minis, the table, the dice, and the rules knowledge.

I have like..... 150ish armies across a couple dozen games so I think its pretty safe to say I"m multi army. I have scaled back quite a bit from my worst excesses though.
These days I'm far more likely to stick to a primary faction for a game. I do like to have a second antagonist option in my collection. Even for the stuff I've got a bunch of options for, I'm getting better about picking one to keep up to date a backup and for anything else just having it done in a little one off force I can break out for fun instead of an army I actively maintain.
It also helps that I mostly focus on smaller games these days. My concept of an army is a lot closer to a dozen models than it once was. Like I'd love a second 40k army, but it would probably be Orks and that's a commitment I am not in the market for these days.

Army level, I honestly don't have that many. Warmachine is really the only large scale game that has clicked for me that I still love and play regularly. After that probably Star Wars Legion. It's a really competent system, but I doesn't support heroes well and I expect to fall out of favor for Shatterpoint. For a third.... I'll say 40k if only because people love the world and models so much that I enjoy the people even if I'm not passionate about the game. I think the latest edition of Sigmar is interesting as well and I have armies for it, but they seem to keep revamping the rules of my stuff faster than I can get it on the table.
Skirmish I have the opposite problem. Narrowing to 3 is hard. Top spot right now has to go to Marvel Crisis Protocol. It's just a phenomenal game with or without the license. After that, I'm really loving Judgement's new edition. I've always felt it captured the same qualities as Guild Ball, but was just too expensive in 55 mm resin. The Creature Caster resculpts are fantastic and bring the price down to a reasonable level. Third place I'd have to give to Infinity. There's really just nothing like it and no other game captures the positioning and coordination of a sci fi fire fight.
Honorable mentions go to Malifaux, which is just a fantastic world with clever gameplay that mostly suffers from taking a very long time to resolve. Monsterpocalypse may be my favorite game of all time. The original was a favorite of mine but the new edition really sings with a lot more focus on monster wrestling. Main weakness is just that the kickstarter killed the momentum we had going locally. Bushido also needs a nod. I find the model balance a little iffy, but its a really tense game full of interesting decisions.

@LumarSol, thanks for the detailed reply. Although the miniatures never appealed to me, for some strange reason, I’ve always wanted to try Infinity. I should get on that using 40k proxies.

I actually had the opposite problem with Infinity. Love the models, could not for the life of me make sense of the game. Tried to hard to apply what works in other games and it just doesn't reward the same efficiencies. It's best to think of it more as a push your luck system; where you can do as much as you want with a single character, but each time you take an action you risk losing them. Learning to "waste" actions to stack the odds in your favor is key, as is positioning your grunts in a way that forces your opponent to waste actions dealing with them. When it clicks, its brilliant; rewarding fantastic corner clearing tactics and making the terrain layouts come alive in ways you never really see on the tabletop.

My goal is 1 of each army for 3rd Ed. 40K and one of each army for 6th Ed. WFB, not counting eclectic subfactions. So far I'm only 3 down for 40K and I think 2/3 or better of the way toward my WFB goal.

It really depends on the system.
I never collected more than one army in Battletech. Didn't seem worth the effort.
For WHFB, I started with one, but because the models have utility in D&D, there was a built-in opportunity to expand into different factions.
In 40k, I was pure Marines, but that was also a function of limited resources. I branched out in 3rd, but once I "went retro," I decided to collect all the 2nd ed. armies just for the fun of it. I have achieved this goal and am mostly rounding out the edges on various factions.
For historicals, it's always useful to have models to loan an opponent, or so that you can play the other side for a change of pace.

Going beyond 40k, I have an army of High Elves containing some Wood Elfs mercenaries.
An army of Dwarves.
Many creeps if I put them all together, Trolls, Orks, Goblins, Ogres, but not really an army by themselves.

My main army is Black Legion CSM. Various different armies can be built from that collection. (Death Guard/World Eaters with a bit of work).
Also have full a Crimson Fists and Necron army that can be used straight away..
Have a usable Nighthaunt army as well as Flesh Eater Courts weirdly. (Id probably have a Stormcast army as well if I didnt find painting them utterly boring for some reason.)
Also have a Dark Mechanicum and Sisters army in the early stages.
But every time I start another projects I always come back to CSM in the end.
