Both. The FAQ removed the army book limitation on one named spell per unit now it's just one named spell per caster per turn. Gut Magic is not RiP it's just dispelled as a RiP spell so the effects stack which means it's possible to have S6 T6, stubborn regenerating ogres...unlikely since opponents can dispell but possible especially with the help of some items like gruts sickle.
As for greatskull and hellheart... I can't remember which (hellheart I think) but the enemy spellcaster's rolling on the gut magic miscast table which would be extremely evil on a non-ogre caster. Hellheart's just one use but it'd only take one use to off the caster since all doubles=miscast.
A friend pit of shades'd my deathstar and lost his caster to greatskull and the spell even deviated off the unit so I didn't even lose an ogre.

My favorite way? A totally tooled out character designed to survive, survive, survive... Stubborn or unbreakable is a bonus.
Then Charge the deathstar, and challenge. Most people will accept.. they spend all game trying to kill one character.

I killed a block of 18 ogres with a unit of thunderers, BSB, and anvil.
Anvil cut the move in half, the thunderers shot at them every turn (unit of 30, 15 wide). The BSB had a pair of runes of slowness, champ had brace of pistols to make all stand and fires at short range.
So 3" move, 6" march on the ogres, then a 2D6+6" charge, cut in half, and then subtract the higher of 2D6. They tried to charge 3 times, and failed 3 times. That was 4 rounds of shooting, and 3 stand and fires.
Anvil + runes of slowness is my new death star killer.

I probably should have clarified that I play Bretonnia and I typically run a block of 12 Knights of the Realm with my BSB inside along with the full command. When I charge I am actually getting 11-13 attacks from the knights lances (not counting attacks from horses and the heroes/lords attacks) depending on how many heroes I have in the unit since I am allowed the attacks down my flank. Yes when I played in my last tournament I did get hit by a lot of attacks, but I most certainly killed more with my better WS and S on the charge. My rank bonuses and kills won me the fight and I killed enough to make it a really difficult Ld check for my opponent.
Also, you cannot stomp cavalry. Infantry, war-beasts, and swarms only.
I do agree that there are other ways to take them out. Typically I will use my trebuchet. But the charge has worked for me 3/3 times now and if I have to I am not afraid to do it.

I'll agree with that. Really, all we're looking for is how cheap we can get 'em. Monstrous Infantry have 3 wounds, S4+, T4+, and 3+ attacks. We don't need any more fancy stuff than that; just get the bare minimum as cheap as we can.
It's a similar mentality to how it's easier and better to get 10 wounds and 10 S5 attacks in a like number of Dwarf warriors than to buy two Lord choices with the proper Runes.

Poison is the bane of all things high toughness and low armor....
Ogres are also afraid of big blocks of witch elves.... sure you will kill a bunch... but 40 something poisoned attacks.... not cool.

Don't forget though, butchers and slaughter masters are immune to poison. Not like they are that great in CC though, so 40 witch elves will still rip a unit apart.

Ogres are actually one of the few armies whos casters are decent in CC.
Butchers are T4 and SMs T5 and both have 4 wounds.
they can't get any armor, but they can get Ward saves and magic weapons.
a popular build is the Fencers blades and Wyrdstone necklace. 5+ ward and WS10 with 5 attacks.

Butchers are T5, not T4.
of the fellas around here runs a large unit of ironguts with a slaughtermaster, 2 bruisers and a tyrant. I basically delay it for as long as possible. If I have to fight it, hammerers in the flank have a chance to send it packing. But if he holds and reforms, I'm done.
Basically, it's one of my most feared units, and I feel like I have to play my tail off to get the win.

My answer is the simple one
Dont play against Ogres...
If you cannot avoid this, my answer is copious amounts of firepower. So much blackpowder that it makes my side of the board black with soot on the first round of shooting. That and Runefangs, I love my Runefangs  .
I observed a game where a WoC player was fighting an Ogre player, and utterly destroying him in closecombat while every time the Ogre player casted a spell, the WoC player just dispelled it with dispel scrolls (damn them to  ing hell) and the end result was an utter curbstomp in the WoC's favour. Next up I played, and guess what happened... you guessed it, combusting blackpowder happened. I killed the Chaos player without him ever reaching the gunline (some river trolls attacked my knights, but my knights won anyway cause their cool like that), except for the 2nd last turn, when he charged with 4 chaos warriors and a lord of chaos, forgetting completley about stand and shoot  . I have no doubts that against Ogres, the more firepower you can bring to bear, the more chance you will win (or am I being overconfident cause my Speculum weilding wizard killed a chaos lord... nah)
P.S I still have to test my firepower theory, but its worked so far...

Handgunners do decently, but, as was stated earlier, Cannons are abit of fail in that department(ironicly, since they are supposed to be good at killing big scary things)
the problem with Gunlines vs ogres is that they REALLY rely on killing the ogres before they make it into combat. if even 3-4 ogres makes it to fight your handgunners its over for them.
the solution is to decrease your ranged firepower for some CC troops.

You killed 18+ Ogres with 10 knights? I suppose they're Inner Circle, but...seems unlikely.
@Sanctus-Malas: I don't think Empire artillery does all that well against Ogres. Cannons kill a model or two. Mortars might kill one. Hellblasters are cool, and the Rocket Battery is great, but they're both so unreliable.
Handgunners sound like a good choice. But all that considered, you've still got 1-2 rounds to shoot them before they're eating you.
Also, you can only have one Dispel Scroll.

No way even Inner circle defeated a unit of 18 ogres.
the knights get 16 attacks on the charge plus 5 horse bites. the knights hit on 3s, about 11 hits. 3 horse hits. 11 hits at Str6, 9 wounds. 1 horse wound.
3 ogres die(assuming there aren't Ironfists being used as shields or they have Trollguts)
15 ogres swing back. 45 attacks. about 23 hits, 15 wounds at -2 armor.
15 3+ armor saves. 5 knights die.
ogres lose by 5 but are steadfast.
the knights have a 16% chance of failing their Fear test too. if that happens the Knights will only cause 5 unsaved wounds. the ogres will cause 7 unsaved wounds.
the ogres will most likely stay after the initial round. they will get creamed in the 2nd round .

Odds are lower than that actually, he said the IC knights have GW, they would have go after the Ogres...
If my CoK plus cauldron have trouble fighting ogres... Empire Knights are even less likely.

We have to factor in the fact that the knights had a battle priest with them, the priest would give them hatred and would also be able to buff the squad with unbreakable to deal with fear. If he didnt do that he could use the shinning watchimigiger to deal a couple of magic hits. This would drasitically change the combat resolution.
As with my gunline stratergy, 40 handgunners is a pretty cheap unit considering how many shots it pumps out. For 360 points I have a unit that wasted a warriors of chaos army, I still have plenty of room for close combat support. Like Knights. With a priest. Yeah.
I only use artillery when there are high prioritey targets, against ogres there are too many high prioritey targets, so I only use the hellblaster volley gun (it may be unreliable, but it still shoots a LOT of bullets  )

Well, I generally assume that people build all-comers lists and try to deal with challenges from there. But, if you're building a list to custom-shoot ogres, Volley Gun or Rocket Battery are the way to go...though the prior has a comically good chance of not being able to fire, and the latter will miss more often than most.
Why 40 handgunners all in one unit, though? Seems like, say, four units of 10 or two of 20 would serve you better.

a Priest wouldn't do much aside from add a body and allow rerolls in the first round.
and since they were armed with GWs...
54 ogre attacks swing first,
27 hits,
18 wounds at -2 to armor
9 failed 4+ armor saves(no shield for you  )
1 knight and the priest swing back.
2 attacks from the knight. we can assume both hit with the reroll.
2 attacks from the priest, both hit.
4 attacks needing 2s to wound. 3 wounds.
1 dead ogre.
Ogres win, knight is unbreakable.
next round, they get curbstomped.

I was thinking of adding a Daemon Slayer with the Rune of Smiting (D6 wounds per wound), the rune of might (Double S against T5+) and the rune of fire (flaming attacks).
He's I5, WS7, S4 and T5.
The idea is to run him in to the deathstar and challenge. If the ogre player accepts, awesome. Against a tyrant, SM or Bruiser, you get 4 S8 attacks. That should be enough to plant two wounds which will average out at around 7 at S8. Chances are you've just exploded their character, and gotten some overkill in there aswell. With luck, you could get impressive amounts. This will force a break test, and Ogre leadership aint that hot. If the Ogre player refuses, you can still hold them up for ages by killing a dude at a time before he can hit you and suffering minimal attacks back. For this to work properly you'd have to flank charge to prevent the back rank attacks slowly pasting your slayer.
I dunno if it'd work, and 210 is a lot for a single character with no armour save, but I do think it would be a lot of fun to 'splode ogres left right and centre.

Daemon Slayer won't work.
You'd get the attacks; most likely kill 2 ogres, and then take 12 attacks, +2 stomps in response.
Lone naked heroes just don't work in 8th edition.
In a challenge, my tyrant always has a 2+ ward against flaming; it works so well with the regeneration that I never pass it up.
