I made a fantastic chili for my wife and I as follows:
Ingredients:
Spoiler:
Servings: 2
3/4 pound ground dark meat turkey (beef works fine too)
1/2 can Kidney Beans drained
1/4 cup Onion (Yellow) chopped
1/4 cup Celery chopped
1/2 cup Green Bell Pepper chopped
2 cloves Garlic minced
1/2 can Diced Tomatoes
6oz Salsa (Newman's Own Pineapple)
1 tsp Cumin
1 tsp Cayenne Pepper
1 tsp Curry Powder
1/6 cup Rice Wine Vinegar
1/6 cup Jalapeño Juice (the stuff jarred/canned jalapeños sit in. Jalapeños themselves can be added for more heat and flavor)
Instructions:
Spoiler:
Sauté onion, celery, bell pepper, and garlic until onions are translucent and soft. Add meat and continue cooking until meat is browned. Add kidney beans, diced tomatoes, salsa, spices, vinegar, and jalapeño juice. Mix thoroughly and let simmer uncovered on low-medium heat until excessive juices boil off. Serve over rice, with shredded cheddar and Fritos, or any of the other standard chili goodies!

last time I cooked I made a vegetarian dish for my girlfriend. Pesto pasta with a Black Bean Sauce
Ingredients:
Pasta:
1 lb Pasta
Pesto Paste
Grated/shredded cheese
Sauce:
Olive Oil
1/2 Chopped/sliced yellow Onion
Garlic, sliced (1/4 clove is about right)
Sliced Mushrooms (i prefer white mushrooms)
1 can Goya Black Beans
1 jar Goya Sofrito (smaller size)
1 packet of Goya Sazon (I prefer with cilantro and achiote)
Adobo
Paprika
In a large frying pan/saucepan/skillet heat oil(dont skimp on it, you need a good amount)and sautee onions, garlic, and mushrooms
Drain (most of the) water from black beans and add to the sautee
Add the jar of sofrito (less if you feel it would flavor your sauce too strongly, its not for everyone)
Add the packet of sazon and season with paprika and adobo to taste
Mix vigorously
For the pasta, simply boil it as you would normally, when done add some of the pesto paste (I use a really thick homemade one, it acts more like a glaze to the pasta than a sauce, not sure how to describe it) and cheese and mix vigorously, serve, and enjoy.

just about two cups of dry elbow noodles, boiled in salted water for about 6-7 minutes, drained and rinses with cold water and a splash of olive oil, transfer to baking dish.
While cooking noodles, fry up half a can of spam cut into cubes in a skillet over medium. Mix into the noodles after browned off.
in pan to cook noodles, melt some butter over warm/low heat, about a quarter of a stick, add similiar amount f all purpose flour until it browns and thickens, add half a cup or so of milk, stir slowly until it thickens a little, add a cup of cubed cheese, mixed cheddar, fontaine, monterey, keep stirring until all the cheese melts down to a nice sauce.
Add in some pepper, basil and oregano to taste, then pour over the noodles. cover top of mac and cheese with a layer of panko crumbs, then put in oven about 20 minutes.
enjoy.
Ooooo I have leftovers, dinner time.

Mix the cheese and breading, dip the pork chops in egg, cover them with the breading and cheese, put them in a pan, put the carrots and potatoes around the pork chops, bake at 400 until cooked all the way through (about 30 minutes) and viola, Parmesan pork chops with veggies. If you want you can use water instead of egg, but I don't find that it holds the breading as well.

I cooked a vegetarian - well, a herbivore, anyway.
Grilled* pepper and garlic crusted lamb cutlets with a potato rosti and steamed carrots and beans.

I marinated some porkchops in italian dressing for 4 hours in the fridge, then grilled them on my george foreman grill
sauteed some onions and sliced mushrooms in a light chicken broth.
then I just threw a salad together using spinach, romaine, banana peppers and shredded colby jack, then used the rest of the italian dressing that wasn't used to marinate the porkchops to dress it.
going to use the remaining porkchops and bread them like ahtman said, since that sounds good.

You need - burger buns without seeds (important!)
500g minced beef
100g minced lamb
100g minced pork
2 eggs
couple of onions
lettuce
tomato
1 1/2 teaspoon garlic
1 teaspoon chilli
bacon
First, make the patties. Mix the minced meat together, with half the garlic and the chilli. Add an egg, and some diced onion and mix. Shape into patties, Larger is better than smaller.
Cut the buns in half, and oil them lightly, pop them on the grill, on the edge.
Fry the patties up whilst the buns toast and cook the bacon nicely.
mix in the rest of the garlic with some butter, shred the lettuce, chop tomatoes etc.
butter the toasted buns with garlic butter, add the cooked patties, and then add toppings and condiments. NOTE: Garlic is NOT optional.

An indeterminate amount of stale, or oven dried bread cut into ~1 inch cubes.
Diced fresh mozzarella.
Diced red onion.
Flat leaf parsley, torn roughly.
A prosciutto chiffonade. This is the most annoying part, I find a little olive oil on the blade aids the process.
Toss with a standard caesar dressing (olive oil, anchovies, grated parmigiano, minced garlic, black pepper, red wine vinegar, an egg yolk, and a little lemon juice is what I use), let stand for 15-20 minutes, and garnish with shredded parmigiano.

Last night I did a pretty standard spag bol but the night before I did pork chops with Heston Blumenthal's crushed potatoes and glazed carrots - turned out pretty well even though I had to substitute red wine vinegar for white wine vinegar.
Last proper meal I cooked was on Boxing day (26 Dec);
French boned rack of lamb,
on a bed of crushed new potatoes,
with roasted root vegetables...
Oh and a generous helping of mint sauce.
Nice !
I also do a mean burger on the bbq (when the weather allows) with hom made chunky chips (not fried but done in the oven)
500g Mince beef
1/2 finely chopped onion
60g bread crumbs
50g mature cheddar, grated
1 lightly beaten egg
1tbsp Worcestershire sauce
1 tsp chilli powder
chopped fresh parsley
and seasoning
I generally look on the net for suitable recipes then put my own spin on them - Jamie Oliver and BBC recipes are my preferred choice
Need to eat food but don't want to give up drinking? Well have I got something for you.
Step 1: Grab a piece of steak, bottle of whiskey, garlic powder, parmisian cheese and sourdough bread.
Step 2: Put the now buttered bread in the oven covered in garlic powder and cheese (you will need two slices) and start to cook your steak (Bloody is good but I like mine cooked a bit more)
Step 3: Once the steak is cook pour whiskey into shallow pan turn the flame up and toss the steak in there.
Step 4: Grab youself some tomato, toss it and the steak on the cheese bread and enjoy!

Take as much tagliatelle as you feel like and boil until al dente, slice the bacon into 1cm wide pieces and fry them nice and crispy. When the pasta is done, drain it, but save some of the water. Then add pasta to the frying pan when the bacon is done, adding some water. Grate parmesan over it, mix it and enjoy. Meal in 10 minutes and not really that much work.

I fry up some diced bacon and mushrooms together then put them aside on a plate. I then cook my steak in the juices. I like it medium-rare but modify to taste. SHortly before it's cooked to taste put the bacon and mushrooms on top of the steak, cover with cheese. Place lid on pan or place in oven. When it gets all melty serve. It's my heart attack special... and god it's delicious! you can do it with chicken filets as well for a slightly healthier meal.

Yesterday I cooked for myself and a lady friend of mine, the following:
Pollo Mole: I don't know how traditional my version is, but it works. I took the cheap chicken breasts ( the "includes rib meat" type, very inexpensive), and prepared them in the pressure cooker, with just a little salt. They come out very tender. This went on a layer of whole grain rice and a pre-made mole sauce. By the way, if anyone knows a good recipe for a mole, please let me know. It has chocolate in it, and thats about all I know about it.
Side dish of orange glazed beets: Boiled beets with the root and all but a couple cm of stem cut off. Covered with a glaze made from orange juice, orange marmalade, and butter.
Also worth mentioning I'm still eating leftovers of my venison pasta. It is ground venison with whole wheat pasta, covered in an alfredo sauce, with a little basil.

Slightly lost in translation across the pond here - I assume we are not talking about peeling, cooking and eating a small, brown mammal that digs tunnels?
Used a 10 year old Glenmorangie because I was really not sure how the whisky sauce would turn out... Turns out I should have used my 15, or 18 year single malts to be even more tasty

If you are asking about Grignard's post... I believe it is pronounced "Mo-le`". Its a mexican sauce.

1 pound ground beef, 80% lean is good for this.
1/3 pound seasoned sausage,
1-2 cups Bread crumbs, Seasoned works best
2 large eggs
seasoning of any kind you like, I go with spicier seasonings.
salt and pepper
Mix everything listed into a big bowl and mix together, make them into balls, about one bite to 1 and 1/2 bites, Brown in a pan or skillet, making sure to cook through out.
add over the top any canned, jarred, home made, red sauce. heat sauce up, throw on bread and add a white cheese.
