I assume there are hospitals of some kind in 40K. My question is where are they located, how big are they and who runs them? I understand that Chapters have Apothecaries and, from what I understand, some sort of 'Nurse's Office' for SM. But what about the Imperial Guard hospitals sitting behind the front lines

Depends entirely on where you live and how much money you have. If you're an up-Hive grand poobah, the hospital you go to is high-tech and extremely nice. If you live in the underhive? You find a corner to die in. There is no hospital. And people will collect your corpse to sell it to the AdMech (or someone else) for use as servitor stock, organ harvesting, or rendering into corpse-starch.

As always, it depends on the world. Almost anything and everything you can imagine can exist somewhere in the Imperium, from Canada to hell Nazi Germany to decadant utopia.
Feudal worlds may have shamans and medicine men or apothicaries. Imperial worlds may be exactly like our own, or socialist, or hive like, or ultracapitalist. They may have crazy Star Trek hospitals for the nobility and Civil War bone hackers for the commoners. It may be a company world where everyone works for the corporation and gets treated at the local med station.
Anything you want. The Imperium has very little shared culture between worlds.

The Adeptus Sororitas have the Orders Hospitaller which provide field surgery for the Battle Sisters, as well as other Imperial non-marine branches. Out of all the options, they're who I'd like to have working on me.

Hmm.. I must have missed something somewhere... I was going to use "soft hand and a kind word" as their bedside manner but the Hospitallers are also in power armour so it didn't seem quite correct. Sexual innuendo was unintentional.

Some people, mostly fashion designers, make gobs of money on the fact. Hospitales in 40k are rune by a branch of SoB who call themselves Hospitallers just like the Knights from the Crusades (Knights of Saint John). They provide the medical services for Hive cities and also provide front line care for injured Guardsmen and fellow SoB, and other servants of the Emperor

You don't have to, but you certainly don't have any right to tell people to conform to your world view as well. It's the interwebs, offense will occur.
As for the OP, I believe it was it was Warriors of Ultramar that delved a bit into the hospital stuff. The Ordo Hospitallar was adressed to an extent, and sorry to burst bubbles, but it wasn't Amazons in Power Armor administering morphine to the wounded. The character it centered on actually seemed quite unfamiliar with her ceremonial weapon when she was called on to use it.

Most hospitals are not run by the Hospitallier sisters, though they are the only organisation that operates on numerous worlds throughout the Imperium.
Anna Curth, who becomes one of the head medics for the Tanith 1st, worked in one of the hospitals in Vervunhive. You might be able to find a more decent description of her workplace in Necropolis.

Sex symbols can also be positive though. There are many recorded cases of pretty nurses in military hospitals brightening the day of the wounded and helping them heal, hence my original statement.

There are of course hospitals, not all are run by the Hospitallers.
I would imagine they would be huge, especially ones in Hive Cities. Able to serve thousands, if not hundreds of thousands, of patients at once.
There will also be local clinics and such scattered about.

As far as I know, this fellow is correct. It seems to me from the Ciaphas Cain books that the best medical facilities for the Imperiums fighting forces(except for space marines) is the Sisters. That is not to say that the Imperial Guard and Navy both run many medical facilities of their own. The Shadow Point and Execution Hour books both give very detailed descriptions of the Imperial Navy side of medical facilities.

Well the FFG's Dark Heresy haves a psychic discipline known as biomancy (the shaping and manipulating of flesh) that can not only heal but regrow limbs (obviously won't work for a lost head), who needs doctors when you can regrow your limbs, expunge acid and poison and survive vacuum. Though considering the rarity of individuals with their psychic gift advanced to that level and the ant psyker nature of some of the Imperium's citizens I doubt that we will be seeing a psyker hospital.

The Pavoni of the pre-Heresy Thousand Sons had something similar.
