So, to clarify straight away. I am not asking for what the best units in your codex are, as that's a relatively trivial exercise in statistics. I am also not asking what your favorite units (fluff or model-wise) are.
What I'm interested in is what you think the most interesting units in your codex are. By this, I mean units that wind up getting stories told about them, or by units that you bring because you want your list to be more fun.
For example, I love my priests to death. An old man cutting a land raider in half with a 10-foot-long-chainsaw sword is awesome, regardless of its general effectiveness otherwise. That he makes everybody so hateful that they reroll their to-hit rolls is also good for a tale. Likewise, stormtroopers are pretty awesome. The elite of the elite careening through the air in a valkyrie and then slagging something to death with meltaguns while doing a pose or snapping off a zippy one-liner.
Like if you were going to write a novel about 40k, for example, who would you want as its main characters? What gets your imagination going?

Grots. Little idiots running around a battlefeild shooting snub-nosed pistols, stabbing at genitals with rusty knives and scrambling across mine feilds.
Being forced to the front lines by a big brute with a teeth on a leash. Slapping repairs on tanks at breakneck speeds.
Being complete cowards even when encased in 3 tons of armour bristling with weaponry.

T'au Pathfinders.
They are elite yet not. Forward recon units that are highly trusted at best. Cool gear, mandatory attached vehicle, all equiped like most Firewarrior Shas'ui but they are still Shas'la. Remind me of the 82nd Airborne from WWII for some reason. See them posed next to their Devilfish and think, man, they are screwed. But they do what they must. For the greater good and all that. All other tau units are to 'integrated' to really have epic tales as individuals.
Or T'au XV25 Stealth Suits.
Your all like: "Where are you stupid T'au!?"
and they're all like:  "We is all up in your base!  KEEELING your dudes!  "
and then you go: "What!?  "
and they're like:  *poof of smoke*  TEE HEE
and you was like:

It might be kind of cheating, but i like Zahndrekh and Obyron as a pair.
Zahndrekh is just a dithering old eccentric and random general, he just cuts around the battlefield and the galaxy on a whim. He is honourable in battle and prefers to capture his enemy commanders, treating them as honoured prisoners.
Obyron on the other hand is the cold, stern faced body guard. I always have mental images on Obyron face palming at the decisions his boss makes before wading through the enemy with his warscythe. On a practical sense he hops around the battlefield with his ghost walk mantle, popping in and out of combat. Then when your opponent see's the dithering old man in a squad of warriors and charges him, *boom* Obyron prots across the board and proceeds to smash them up!

Guardsmen. Not vets, not commanders, not heroes. Regular, bog standard guardsmen. The grunts, the redshirts, the poor bloody infantry. I've seen guardsmen pull off feats even a space marine would fail at, and every time it reminds me why I play IG. I've watched a single infantry squad hold an eldar wraithlord up for an entire game, even though they had no way of killing it. They literally sat there and took each hit on the chin, and held him up all the way to turn 6. I saw a single melta gunner stand his ground against 500pts of eldar shooting, and hold the line, where 3 squads had died around him. The eldar player literally had to charge him with a full squad just to dislodge him. I had 2 survivors of a PCS with an autocannon rally 2" from the board edge and provide covering fire for an entire game, literally saving the match. Heck, I've even seen my lascannon team in my command squad one shot a charging Black templar chaplain, as he was charging them at point blank range. My guardsmen are why I play footguard. Even though I know many will fall, and most will die just trying to inconvenience the enemy, somewhere in that horde of guardsmen, there's a badass waiting for his moment to shine. That guardsman that walks up to draigo and says "screw you, today you die", the guardsman that pulls his meltagun out and oneshots a landraider, saving your entire flank. That one heavy weapon team that gets the lucky shot on that stormraven and swats them out of the sky. I don't think you could have a cooler unit in the game to be honest. In a game filled with daemonic gods, genetically engineered killing machines, and all sorts of insane alien life forms, watching a normal man stand there and hold the line always ended up being the coolest moment to me.

Chaos Marine Chosen would be my choice. Sneaking behind enemy lines or simply outsmart them to deliver devastating volleys of fire into an unexpecting enemy, where it would hurt the most.
They are the specialists who choose the right weapon for the job and don't charge mindlessly but choose their targets with care.
Or the Thousand Sons. I'll keep fielding these no matter what

Much to the feeling of Moustaffa, for me it is my Drop-Troop Guardsmen. They operate deep in hostile territory, for long durations of time, and are back there exacting guerrilla strikes on enemy forces with their heaviest man-portable weapon as the Missile Launcher; no tanks, buggy-mounted heavy guns, and a whole ton of air-support. These are the elite Regiment, some of the best and most well equipped the guard has to offer. And they deliver their strength by dropping from the sky (dangerously) and landing operating a little grav-chute.
Boom.

Stormtroopers as well, give a bit more credit to the normal humans, when properly equipped and trained, they can kick ass and take names too, ah!
Grenadiers from the Krieg regiment as well, usually the ones sent first, to either scout for the enemy force, or clean out a position and hold it for the rest of the regular Kriegsmen to reinforce them and establish a more permanent position. Also, equipped like a Stormtrooper and probably as well trained.

DE: Mandrakes. They are so damn cool. Their fluff is interesting and the models are awesome. I love em.
Marines: MoTF with a servo-harness. The mechanic basically. Think about it. A guy in a heavy armor with robotic arms on his back fixing tanks in the middle of the battle... and occasionally burning some poor thing to cinders or tearing them apart with those servo arms... while hacking off limbs with that power axe.
IG: Leman Russ Punisher. Shooting those 20 shots every turn kinda feels like they never let go of that trigger. Who gives a damn about those AP 2 shots. Volume of fire works just as well. That necron lord with his squad from my last game can tell you what I mean

I can see it now....Nids are now a collection of autonomous hive fleets there are multiple Hive Minds and they all war with one another in addition to everyone else. They speak to humans using telepathy, and they can now ally with Space Wolves as battle brothers, because reasons.
Tyranids talking to humans would be like you talking to your mashed potatoes or the probiotic in your kiefer drink. It is neither possible nor productive. Inside my mind I pinched my nipples and savored his bitter silence.

I think my favorite unit in the game has to be regular old boyz mobs. Be they shoota or slugga, to me there's no cooler image in the game then a full mob of greenskins charging an entrenched position, taking horrific losses from enemy fire, before slamming at a dead run into the massed ranks of the foe. Cooler still are the challenges; I've already had several games where the fate of the battle rests squarely on the shoulders of one of the few surviving nobz on the table and the ragtag remnants of his mob as they struggled against superior forces and somehow came out on top. Moustaffa, something tells me we could have a heck of a game throwing our footslogging hordes right into each other.

Grimaldus. Who already has a book about him. The whole speech he gave the Titan Princeps about throwing her out the window faster than the crew could soil themselves in fear of him was priceless. Then the thought of him running in front of a bunch of screaming space knights, who are already pissed off enough for an extra swing, will randomly have a cenobite uncover a relic and whip the boys up enough to swing again, and swing when they miss. Badass.

The IG Russ because its just everywhere. It might not be the toughest or the most powerful but one will always get the job done.
Or the Tauros Venator. Just love the idea of some dune buggy roaring about blasting things with a lascannon the roaring way before they can return fire and popping up somewhere else to hit the same target from a different angle.

and regular guardsmen, because of as mrmoustafa said, you will always underestimate them, but every once in a while one puts his hand up and says "hold up, youre done" like the time i watched a lone guardsman charge a demon prince with 1 wound left and kill it in CC, craziness
