Turians, Humans (alliance) and quarians. I've actually considered making a Mass Effect table top game using 40k rules (yeah I know better systems exist but thats what most people are familiar with) and also a space game using Firestorm Armada rules

I'd be down for Quarians, Asari and Geth in that order.
There should be options for Mercenary companies (Blue Sun, Blood Pack, Eclipse and Aria's crew) and Spectre forces too though.
That would be epic.
Like. Dang there's all sorts of incredible possibilities for this. Enough so that I hope EA doesn't let it happen just so I don't have to take out a loan to pay for all this stuff T_T

I think ME would be best suited to a skirmish or BFG-style game; it's the scale we're most exposed to in the games, and is the most functionally fleshed out. Army-size engagements are most vague handwaving and a few general comments as to how each faciton wages war, but the focus is small-scale.
Of the two options, I'd be most into a space-based game (as the ME developers actually gave space warfare some serious thought, it seems vaguely realistic). I'd love some Systems Alliance warships, reminding the enemies of mankind that SIr Isaac Newton is the deadliest son of a bitch in space.

Therefore, I conclude, Valve should announce Half Life 2: Episode 3.

I agree with it being better as a skirmish - maybe someone should mod the Infinity rules?
I'd want to make an inter-racial crew - I love all the alien races, I want a Krogan trio charging the enemy, shielded by an asari biotic, while my quarian hackers try to infiltrate the enemy computer system.
And I'd kill (or unleash a genetically-modified plague) for a model of a scientist salarian!

He's certainly up there.
Mass effect 2 is probably the best game in the series all in all though, even if they first game had the best plot.

The strength of the first game is they spent a lot more time world building, a neccessity of course, but it's where you learn in the ins and outs of the universe. Learning the politics, history, geography and so on of the settings is extremely engrossing, especially when it's done with as much care as Bioware generally does (Their plots aren't always ace, but they know how to craft a setting). ME2 and ME3 have a lot less exploration, they're much narrower in focus. What they offer is more concise, to the point, and, I feel, more immersive, but they don't have the same sense of awe that ME1 had.
Hell, I even loved the Mako stuff; genuine exploration, "To boldly go where no one has gone before" and all that, without the same immediacy of some galactic catastrophe. There's also the attraction to a mystery; in ME1, you really didn't know what's going on, not really. Quite lovecraftian in many respects, but ME2, and ME3 in particular scale back the mystery, it's a lot more direct conflict, which is one of the reasons that bloody ending was so terrible, alongside being massively inconsistent. Yes, I'm still peeved about it all this time later.
I do hope EA will let someone explore the setting in different mediums; I'd like to see a tabletop game, but what I'd really, really like is a 4X strategy game or something akin to Total War IN SPAAAAACE; mixture of space and ground combat, empire building, exploration, etc, a solid combat mechanic on top of the core 4X elements.

A squad level game like Infinity would probably be perfect now that I think about it. That would give everyone room to do Mercs, Alliance, Asari Commandos, Salarian STG, Geth, Quarian Marines (Oohrah!), etc and so forth along with rules to set up Shepard style crews.

Why isn't someone making this game right now? If the game allowed me to field a squad of Quarians with a Krogan merc, I'd be in heaven.

I would back the gak out of a kickstarter for a Mass Effect tabletop game. There's so much potential. So many races, classes, miltary factions, its just ripe for a small squad based tabletop system, or even like a board game.
I'd play geth, krogan, asari, or some sort of mercenary band that's a combination of all three.

EA barely understands their own type of gaming, they are woefully underprepared to handle stuff like tabletop.

Pretty spot on with that all in all mate. They crafted a great universe that felt a little underused in the later games.
The Mako stuff was great as an Idea but kind of sucked in execution.
When I finished mass effect 1 my thought through the next two games were "Please no Deus Ex Machina, Please no Deus Ex Machina" and what we got was poor even for a Deus Ex machina. It also made no sense to the point where fans have created their own explantions to try to make sense of it. (indoctrination theory for example) also mass effect 3 seemed to pretty much piss away the choices you made throughout the game and just ignore them.
I still think one of the best parts of the series is the moment you speak to sovereign in the first game and find out about the reapers.
I really hope future stories are made within the universe. Maybe smaller more personal ones set in a single solar system or universe.

One of the merc corps, or an adventuring party.
I'd want the rules to be specifically designed to let an adventuring party of very few specialists, if played correctly, wade through a wave after wave of cheap and cheerful Rent-a-Mercs, taking casualties along the way to complete objectives under fire; alternatively pitched against really strong Geth or Collector teams in the same type of missions.
Kinda like Space Hulk missions, but without the corridors.

Years ago GW might have tried to get the license for something like this. Now it's Mantic, although you have to think they are no-where near big enough, nor with enough money, to get something like this.
The idea of 'space gipsies' is basically Nomads in Infinity, if you like that sort of idea.

A game, yeah, Mantic would be the top choice.
Just minis though, it'd undoubtably be Knight Models or on an outside chance, Prodos.
I mean, seriously, you've got to hand it to Knight. Getting a Marvel AND DC licence at the same time is miraculous.

Even though this sounds really cool I shudder to think about what a narcissistic and greedy company like EA could get up to with war gaming. And If (all of the gods in the existences forbid) EA and Games Workshop got together on this... I dread to think what could happen.
