Tau really is the only sane choice.
Average Human: Life in the Imperium isn't pleasant for this type....
Space Marine: Loyalists spend 23 hours a day training/drilling/praying at times of peace, and you will inevitably die in combat which makes your extended life moot, you really don't ever have a chance to enjoy it. CSM's have damned themselves to Gods that care nothing for them. Soul Hunter shows how sad and ponderous the life of a CSM is, you're a shadow of your former self, consumed by rage, fighting a doomed war in an environment of constant backstabbing. And while living out a life of pleasure and self-indulgence by devoting yourself to Slaanesh may seem attractive, but damnation has its price in the end...
Chaos Mutant: A life of being expendable canon fodder/enslaved by CSM or a life of persecution at the hands of survival. Not fun either way.
Eldar: Good short of your Craftworld coming under threat, though you will probably be forced to fight as a Guardian. But I wouldn't want to risk an eternity of torture if a stone cracks...
Dark Eldar: Same problem as Eldar, delaying an inevitable eternity of torture. Plus the life for your average DE isn't very pleasant, it's a fight for survival.
Ork: You're gonna live a "fun", but fairly short and useless life.
Necrons: The Newcrons are so stupid now I don't even know what to think. I guess being an Immortal or above is fine now that you're not a slave to the C'tan anymore. The Necrons have certainly become less grimdark...
Tyranids: A mindless beast with no unique consciousness to make you "yourself", you really don't exist as an individual personality. Moreover, the first time you're deployed on any planet you're gonna die regardless of the result (in battle, or melted down in a Reclamation Pool). This existence would be the saddest of any other race, except for the fact these Tyranids lack the consciousness to care about their plight.
Gretchin: Even worse then Ork, there's no "fun". Only enslavement and abuse.
Tau: A somewhat short life (~30 or so years I believe on average), but there is real equality and since each Caste is a recognized contributor to the Greater Good, even a lowly Earth Caste worker won't be treated as scum by a hardened Fire Caste Commander. While your destiny is ore-determined, it seems like you can life a fairly happy existence.

I believe it was closer to fifty, with 40 being like retirement age if you so choose.
Though I think SM would probably be second, since at least there is brotherhood and they are hypno-conditioned not to mind their imminent death in battle, and enjoy training.

Human/Space Marine, Eldar, Ork. Other races are just too inhuman or too noblebright (Tau). Grimdark may mean oppression, but at the very least, Mankind is united and majority of its resources are devoted to survival and domination. The Eldar are as grimdark as the Humans are, and the Orks are even more grimdark than the Imperials. Only race I would not want to be other than the Tau are the Forces of Chaos.

They look Human (minus the pointy ears and space marine height), act like Humans, and think like Humans. The only ones who can match Mankind's xenophobic pride are the Eldar and their towering arrogance. Mankind has manifest destiny to rule the galaxy and eliminate all in the way - the Eldar ruled the galaxy before and will rule it again - how is that different from each other? Mankind is oppressed otherwise Chaos would take advantage of it's unstable psyche, and the Eldar must suppress their very nature to avoid Slaanesh from noticing them as well. To be honest, IMO, it would be better for both species and bad for the rest of the galaxy if the two species became one.

This is just plainly not true.
Eldar have a much wider, stronger emotional spectrum than humans, to the point that experiencing too much of any emotion or mindset can "lock" them into it, see Exarchs and the Dark Eldar in general.
They look the most human, but they are anything but.

The only sane choice is not to partake as creature in 40k.
If, for the threads sake, one is grabbed and thrown into it with a last choice of the species s/he will be born into:
- as humans most of you will make really awful xenos.
- we don't know enough to find the best choice, a dedicated painter/modeller may like to be an Eldar artisan for example to spent their time fully on their favorite part of the hobby.
- to be happy isn't part of the deal, so a life without violence does not come to pass in the wartorn galaxy where no one is missed..
- how many know war time at all? Lots of armchair generals I say so whatever your choice is may turn out as more than you asked for.
and thus, I would try my best to escape the fate of being thrown into the 40k-verse personally.
OtoH, do dakka ranks count? If so , where is my Reaver to command?

Without delving too deeply in Tau fluff, it does seem to me that Tau share a more human mindset than Eldar do.
The Eldar "no fun" clause is mostly that they can't indulge in excess. When relatively low amount of stimulation can yield emotions a human would need quite a bit of stimulation to achieve, I wouldn't say Eldar have a "no fun" clause as such. It's more like a "no debauchery" clause.
...and on the bright side, Eldar aren't anywhere near as pointy-eared as Blizzard elves!

Eldar experience things much wider and deeper because they're a fully-realized psychic race. The only Humans who've fully-realized their abilities are Malcador and the Emperor. Otherwise, the Eldar act like how Humans would act in similar situations.

the Emperor might be the greatest psyker that ever lived, but he doesn't have the specialized training that a Grey Knight has. Also he doesn't have a Grey Knight's unshakable faith in the Emperor.
