So for 'Ardboyz this weekend, I can include either 2 iron clads and a dual auto-cannon dread OR six assault terminators in a redeemer. Both have pros and cons so I figured I'd solicit a little feed back. Which would you choose and why?

You have good AT already. Personally I'd go 1 Iron clad, 2 dual-auto dreads & fill in extra points elsewhere.

Then I'd say go for the Dreadnoughts. Better for supporting your Tactical squads.

I'd say the Dreads too. You lack the target saturation to support a Landraider.

Excellent. Dreads it is. Now does anyone have suggestions on how to spend the 60 points I have left in the list? I'm thinking extra armor for all the Razorbacks since all three Elite, Heavy, and Fast are filled and I don't think a tiny unit of scouts is going to do much for me.

Can you convert combi-weapons for your sgts? Combi-flamers or combi-meltas can be extremely helpful. A friend of mine also likes to use one combi-plasma in a las/plas tac squad, so they can potentially put out five high-str, Ap2 shots in a single turn, or four on the move, if needed to finish off or cripple a monstrous creature or tough infantry unit (like termies, plagues, or even regular SM).

Other useful options might be a siege shield for the vindi, dozer blades for razorbacks (the latter two options allow you much more flexibility in moving through terrain), or the grenade launchers for the ironclads if you didn't already budget them in.
