Mostly I don't do any of these things because I'm too busy having fun sculpting and painting characters from my kids' stories for us to play with. 3 sculpts unfinished right now with unknown plans for more so I may as well count an unmixed roll of greenstuff as part of the backlog.
My total backlog of unpainted stuff is truly impossible to number; my "pile of shame" is probably Mt. Everest (or Olympus Mons) compared to those of other hobbyists. I have only myself to blame though; I collect too many armies and even have a few things from other game systems besides Warhammer. I can give a quick summary of most of it, I think:
Non-Warhammer 40k:
A bunch of Middle-Earth SBG stuff, including Elves, Dwarves, and Gondor for the good guys, and Orcs, Easterlings and Nazgul for the bad guys.
3 starter teams for Guild Ball: Masons' Guild and Brewers' Guild from the Kickoff box set (which I got as a freebie at Adepticon 2018), and the Blacksmiths' Guild (won at a raffle at a tournament last year). None of it has even been primed yet, and I haven't played.
2 starter forces for Infinity: the Operation Red Veil starter and the Beyond Red Veil expansion (so full 300-point forces for Yu-Jing and Haqqislam). Also unpainted and unplayed.
Blackstone Fortress. I've at least started working on this, but most of the models are still only primed.
Star Saga. I bought the main game on a lark when it was on sale at my FLGS; haven't touched it as far as painting yet.
Dark Age. Got the starter as a freebie at Adepticon 2018, haven't touched it except to get it out and look at the models once.
Dreadball Xtreme: Only the starter set, and I have painted a few of the models. Most of it is still untouched though.
Warhammer 40k:
Dark Angels: A lot of non-Primaris stuff mostly, much of which I bought towards the end of 7th edition to build up a Lion's Blade Strike Force. Some Deathwing and Ravenwing as well. Most of my Primaris stuff is painted, actually, and most of what isn't fully painted is at least WIP.
Death Guard: Lots of stuff only primed, a couple of things WIP that I need to eventually finish.
Tau: Probably less unpainted stuff than any of my other armies, but still plenty of drones, infantry, and vehicles to paint.
Space Wolves: Almost nothing is painted, other than a few characters and my Wulfen.
Daemons: Not a huge collection, but only the big stuff is painted. Still some Nurglings and Plaguebearers mainly that need paint.
I really need to finish a lot of the WIP stuff. I didn't include my Sisters of Battle in here because they are my current main project.

I couldn't even begin to catalog it all. I have had hobby ADD for 25 years now. I still have models either just built or primed from 4th edition 40k. One of these days I will finish my Kroot Mercenary army, or my Space Wolves 13th Company.
I also have three different fantasy skirmish forces to finish, probably half a dozen models to get done for each force, although my Skaven force needs an entire box of clanrats to be assembled, as well as a handful of Stormvermin and a Grey Seer, plus some Acolytes.
I also need to finish half a gang for Draculas America and there's another still in their box.
It's all.....well, it's a lot, lol. An old model purge would probably be healthy.

my backlog is pretty small. I've just sold a ton of old minis that i'll never get round to paint on ebay. I want to get to the stage where I have a couple of projects on the go, and then buy new ones as I want to.
I gave up thinking about the backlog or even trying to accomplish what's in it. I've come to the unfortunate and somewhat life altering realization that the backlog will stay untouched for forever.
GW's release schedule has become so absurdly ridiculous that it's impossible to look back. It's painfully difficult to even try to be in the here-and-now as it's just onto something new literally days later.
Automatically Appended Next Post: GW has created a culture in which the fans can focus on only one maybe two factions. It's impossible to keep up with all of the books, all of the rules changes, all of the models, the story line, etc.
There is such an overwhelming amount of content being released and so rapidly that fans are fatigued. It's too much to fast.
I and many others would rather do nothing than try to keep up.

Seriously, just sell some of your old stuff. If youre a novelty chaser you'll never paint the old stuff. I bought the tooth and claw set, back in 2018, and I've painted none of it due to better projects coming along. so i've sold everything from it, except the dreadnought. I just sold my converted GS cult battleforce too, keeping only the patriarch for my cabinet. I feel great. I just have the models that i really want to paint for my display, and nothing cluttering up my storage shed, and not to mention that I now have just over £80 (after accounting for postage and selling fees) after selling 7 lots/items on ebay.

I think it would be more illustrative to estimate my backlog by either weight or volume than actual model count. It's somewhere around one slipped disk and might fit in a 55 gallon oil drum, if you broke down some sprues. My backlog is legion. That I'm not the worst off is little consolation. That I haven't bought a model in years is even less.

I've recently stripped and repainted my plastic Storm Troopers. I've repainted my Vindicare. Oh and finished a Grot Kannon.
Since then I've stripped squad of metal Cadians, a squad of metal Catachans, a squad of metal Arbites, disassembled my Hive Tyrant and stripped the appendages (I like the torso), completely removed the sponson guns on my Predator and rebuilt them with Lascannon and HB options, magnetized, scratch built 2 tank turrets, broken down one Grot Kannon, rebuilt my Space Crusade Dreadnought Sentinel, magnetized all my other Sentinel weapons and stripped by Evesor and my 3 metal Storm Troopers. They are my test units so get stripped quite often actually.
Sitting in my original backlog are my metal Praetorians, my Vostroyans, my SOB's, my home brew chapter Scouts, Assault troops, UM assault troops, UM Termies, Bretonians, Chaos Warriors (yeah both of those are from pre AoS, that's how long I've had them waiting), some Regiments of Renown. I haven't touched any of those and now I have all the OTHER stuff I've just stripped!
I've pulled this straight from my Dakka blog. This is just for my Dark Angels. I've got so much for stuff for lots of other armies. Got a massive horde of LotRs minis and some WHFB stuff too.
