Also, anybody got tips on Sif for a level 40 Warrior? I currently use a +7 Knight Shield (planning on crafting it in to the Greatshield of Artorias once I've killed him), a Titanite Catchpole and the Eastern Armour set. Most of my stats are in strength (34), endurance (20) and dexterity (18). Every time he leaps away before I can get a hit on him then kills me with his double spin attack, where the first hit drains my endurance bar and the second breaks the block and takes away 80% of my health.
The Greatshield of Artorias really isn't worth the massive stat requirements to equip it, and the weight is absurd.
As for fighting Sif... Well, first off, the Catchpole is a terrible weapon. Second, your stats leave something to be desired. Unless you're looking to wield a Black Knight Greataxe, you have no need for 18 dex if your investing so much into strength. Another major weakness of your setup is that you're investing a lot of points into offensive stats (dex and str), when the weapon you're using has horrendous stat scaling (which is one of the reasons why it's so terrible). Getting a decent weapon that takes advantage of the stats you have should be your first priority.
As for your shield, you may want to consider getting something that has higher stability. A Silver Knight Shield or Balder Shield will reduce the stamina you lose on block by around 20% (at max upgrade).
Also, your endurance is really low. With your equipment, you're likely above 50% equip burden, which means you roll and run really slowly. That combined with the low stamina making it impossible for you to effectively block his attacks is a death sentence. Either lighten the load or pump your endurance, because right now you're just a sitting duck.

Thanks for the tips Fafnir. I use Havel's ring so the equipment weight isn't a problem, but i didn't realise how bad the catchpole was. I'll pump some more points go to endurance and maybe switch to a halberd. The reason I have that much dexterity is because I was planning on using a BK greataxe. As for the shield, I haven't even reached Blighttown yet so a knight shield isn't really possible. I'll try the Baldur one.

I'm not sure how good it is or what type of weapon it is, but you can get the Scythe in Sens' Fortress, almost right off the bat, too. Just jump down the part right off the bat into the water, run past the Catchpole people, and run into the hole right behind the one (don't worry, he won't attack you).

Tip for killing sif:
when you go through the portal, keep to the immediate right corner
do not auto lock, lots of stab weapons cant ht the puppy legs, as well as ( see below )
keep below 25% weight, if you get hit you pretty much die anyways, and those attacks that doesnt kill you, you can dodge easily anyways.
When Sif is in the corner, he'll do 3 types of attacks.
type 1, double spin ( i see people always die to this on youtube because they auto lock, sliding side to side wont save you when you need to get out of range )
type 2, Sif puffs up and slash downwards. this you just roll away.
type 3, Sif wacks you with his sword left and right , roll into him.
Why you stay in that corner? When you are at the corner, box him in, make him face you with the corner to his back.
When Sif cant backs up, he will not do the deadly double spin.
When Sif cant back up while wall his behind him, his jump will make him land on your head. Most of his swings wont even hit you lol.
Auto lock is bad here because you cant poke his belly like that.
When you get him down to 1 bar of HP, he will limp around.
When he tries to double left right wack you, he falls belly up.
When he tries to double spin you, he cant finish it at all.
He wont drop his sword :'< myth is false

Nah, his sword doesn't drop, unfortunately....
But I do like how you can make three weapons with his soul instead of the standard two.

Bandit's knife does increased critical damage (backstab/riposte). There's also Priscilla's Dagger, which builds up Bleed incredibly quickly.
Bandit's dagger is great for backstabbing lightly-armoured foes. However, since Rapier weapons ignore armour on critical hits, they're generally better for PvP backstab builds.

You could always do a faith build for the lightning javelin miracle. But I find that miracles tend to be very lacklustre until late in the game.

Late in the game or into NG+?
I'm mostly looking at the Holy covenants (WotW, Sunbro's, Princess Guard) because they co- op better, from the sounds of it.
Stuck at the part of Anor Londo where you have two Silver Archers shooting at you on the Buttress'. How am I supposed to get passed them?
I need to ask for advice more, I seem to get past whats giving me trouble every time I do.

Faith builds won't get the really useful miracles until after the Tomb of the Giants, and aside from Grant, there are no good faith weapons. Even the weapons that scale off faith are pretty weak, so you'll likely end up relying on lightning weapons.
As for the Anor Londo archers:
Start by running up the column. So long as you keep moving, they shouldn't be able to hit you. Once you hit the wall, go right, ignoring the night to the left (all you get to the left is a a consumable soul item). Roll underneath the arrows as they're fired. When you get close to the archer on the right, the one on the left should not be able to hit you anymore, and the knight you're closest to should switch weapons to a sword and shield. At this point, parry his attack, and it should kill him or knock him off the ledge. Continue around the corner and drop off onto the ledge. Enter the building, and in the room to the left there will be Knight Solaire and a Bonfire. Praise the sun.

and disquised myself among the tree.
Then from all the way across the map, like without a doubt he came right at me and killed me.
What gave it away?
Question #2, why is my sorcerer so weak? I tried different catalyst, only leveled Intel
from 42 int to 50 int I only have 8 magic adjust, and from that, even worse

It's been a while since I've played, but if he leaps away, you basically want to run away from him. Also, if you max out your shield, it should pretty much nerf any of his attacks. So just keep an eye out for when he sets up for his double swing attack, and run from it. Every other time run straight under him and just beat him. He's a pushover once you figure him out. EDIT: Wow. I missed a whole page of conversation. Food for thought: http://gamerant.com/dark-souls-speed-run-videos-japan-trung-110681/

All you need to keep in mind if people invade you on the skinny ledges is that unless they have some ranged weapon, they can't hurt you without going on the ledges themselves. And even if they have projectile weaponry, most of it isn't that scary. So unless you're up against a dick like me who would carry a Dragonslayer Greatbow around (has enough knockback to send you flying off the ledge), you should be able to force your assailants into a fair fight.

Grats :3 now most bosses will fall similarly.
Though now Im getting agitated in Duke's Archive....

- the clams, well lack of patience means they hit me from time to time.... but I' got them...

and I died in 1 hit, anyone know what it was? Or what element are his attacks? I had MDef on, still died.
Also I tried chopping his tail, but we went round and round in circles GRRRRR

Look closely. There are little snow flakes (or whatever you want to call them) falling. That's an invisible path. Follow that. With the exception of one path which is not on the main path and you only need to follow to get a Blue Titanite Slab, they're all pretty much straight lines. Shouldn't take you more than 2 minutes to run from the bonfire to Seathe.
- the clams, well lack of patience means they hit me from time to time.... but I' got them...
Pull one at a time, circle, and then wail them.

First off, don't worry about chopping his tail off unless you're building a mage. Moonlight is an excellent sword for characters who pump intelligence, but absolutely worthless otherwise.
Otherwise, if you want to lop it off, you need to attack the very tip of his middle tail (unlike other bosses, who you can chop pretty much anywhere on the tail). It's pretty hard to do. I like to lure him to one side of the room, let him start his dragon breath, and then run to the other before he turns to the other and start chopping. Takes a long time. Another method would be, when the fight starts, run up to the crystal that makes him immortal, and wait until he gets as close as possible before chopping it (ideally, letting him get so close that he pops it himself, but that's kind of dangerous). He'll be stunned for a few seconds, which is when you take the opportunity to rush for his tail. Not guaranteed, but it helps.
As for actually killing him, he's one of the easiest bosses in the game, barring Pinwheel. Run up to him, closer to one of his sides rather than the centre (I like his left side) and start hitting away. When he starts using his crystal breath, just run behind him and continue hitting him. When he fills the entire area with crystals, run to the far sides of the room (either to the fog door, or to where his crystal originally was). Stay there until he's done having his little tantrum (he'll either swing his tails around if he's used his breath, or roar and make all the crystals in the room explode if he just filled the entire room).
The crystal breath itself doesn't do too much damage, so just as long as you keep an eye on your Curse meter, you should be fine. Just watch out for his tantrums, which are very effective at killing the hell out of you. Especially the tail slam, which has a tendency of hitting you multiple times.
If your damage output is high enough, you can just run up to him and swing at him until he's dead while ignoring everything else. I've killed him in three full bars of stamina worth of attacks before.

Also, has anyone really seen a point to using 1 Handed weapons over Two handed weapons in one hand?

The Greatsword has mediocre scaling. Your best bet would be to invest in the stats required to wield it, and then nothing more. Make it a lightning or fire weapon.
What exactly do you mean about one-handed and two-handed weapons?
When using two hands, attacks tend to cost more stamina and you can't use your shield, but they generally come out faster, deal more damage, and have more hitstun. They also go through more poise. Additionally, wielding your weapons with two hands multiplies your strength by 1.5, to a maximum of 60.
It really depends on the weapon and the moveset though.

Faster, safer on block/whiff, use less stamina per swing, weigh less.
If you miss with a greatsword, you get backstabbed. If you miss with a longsword, you just keep swinging.
Additionally, rapiers like the rapier, estoc, Ricard's Rapier, and Velka's Rapier all ignore armour when they backstab/riposte.

Still don't understand HOW, though.
I mean, he would have had to have killed the Asylum boss (7 minutes to get through that), Undead Area's (Another 13 minutes at least, nearly a third of your time right there), Fatty and Slim (A good 25 minutes, at LEAST, for Sens' and AL)....
I mean, he would have had to have never died once. Did he get really good gear right off the bat as well?
