I'm fairly certain I've stuck with the same three armies since third edition (IE, Orks, Guard, and Sisters)...
Why do I not just stick with one? Variety is the spice of life.

I stayed with Dark Eldar for 4 years then got in some tau because I always wanted them and they where cheap on ebay. Ive had my Dark Elves for 9 years. I don't plan on buying any more armies.

I've had:
SM for nearly 4 years (sticking with it)
Tyranids for 1 year (liked the rules, but not my style)
Steel legion for 1 year (just to ally with my SM, stopped- got what i wanted)
DKoK for 1 week  (probably sticking with them 'til march)
GK for 3 months (sticking with them for at least another 2 years, probably more)
Orks for 2 years (got bored, but buying Zogwort just to kill a load of my friend's IC's)

JB: I like the concept of a free Shrike roaming through the treetops of the jungle. I'm not sure that I like the idea of a real Shrike sitting on my couch eating my Skittles.

I started with empire in fantasy and got bored. Then I moved to Chaos warriors and got bored and sold the infantry and just built a monster (Throgg) list. I kept my daemons and occasionally pull them out, for fantasy and 40k but I got bored with them in fantasy. I thought about starting a salamander's SM army and didn't because EVERYONE was doing it and just left them blank. Then I got the BA codex because I thought that everyone was going to be playing it and I had to start in order to keep up. It turned out that I was the only one playing them and I don't run an over powered/broken list and actually enjoy them. I'm not jumping on the bandwagon, I'm keeping them for a LONG LONG time. But it's fairly easy to get bored playing the same army over and over and over and over again for years...hence it being time to move on, buy another army, and seriously violate the old wallet's trust. "Shh Mr. Wallet, this won't hurt at all..."
Sorry guys, running on 4 hours of sleep and had an 8 hour day at work. It's about now that the crazy starts to pop out a bit

I love armies as they all play differently. I figure when I can run 3k of 3 of my favorite factions I will give fantasy another whirl.

Not everyone that jumps from army to army is looking for the best army. There is an Army( or Armies in some cases) for every player's taste, Fluffwise and on the board. How do we know that the "Cheese-seeking army hoppers" aren't just looking for the army that most appeals to them?

I like building an army to a "finish point" where I think it is a nice, playable army that I can have fun with. I build in phases, 750, 1000, 1250, 1500 points. Then I start on my next army. I play my current army until the first phase of the new army is done. Lather, rinse, repeat. But I don't do flavor of the month. I have an old 3rd edition Dark Eldar army, an Eldar army I was gifted, my own Eldar army, and a Space Marine army. And the new army I am working on is Tau.
People don't bring their own painted miniatures to play Monopoly with?

The first, maybe, 10 years I played 40k, I hopped from army to army. I blame the fact that I was young. When I was in my early twenties, I started Space Marines, specifically Salamanders. After getting an army I was happy with, I found I just couldn't move on to other armies.
Now that I've come back, while my Salamanders are still there (and begging to be stripped and repainted), I've started Tyranids and see no reason to start another army really. It's fun to think of other armies you could do, but I always find it hard seriously making a start to an army.

People who switch their army keep GW in business if every one still played their army from 3rd/4th edition GW would implode  . I will always support people who keep the company that produces a good chunk of my entertainment afloat. Seriously though if you have been in the hobby a while and have collected every model you want from a certain army and have it all painted up there really is no place else to go other than another army if you enjoy the building and painting aspect of the hobby. Not only does playing different armies change things up for you it changes things up for your gaming group so its win win for all.

You might as well try a few different armies, since they're all there. I've got a SM biker/landspeeder army on the shopping list after I get a second squad of Noise Marines and three Rhinos to finish off my CSM. My wallet is in chains for a while yet, methinks...

Some of us are just addicted to buying/collecting.
My brother plays one army for both systems, and just recently started a second for fantasy (because of the skaven release)
My cousin plays 2 for WHFB, 1 for 40k and doesn't even think about getting new models, let alone new armies.
Me...I'm pretty addicted, at one point or another I've owned every fantasy army except high elves and wood elves. Not because of looking for "cheese" bu as stated, variety is awesome. (Though I always find myself going back to my one true love....orcs!)

I always knew I'd shoot for 3 armies, all at least 1500 points, I think aiming for less than 1500 isn't worth collecting IMO. However I may bump to 4 or even 5 armies if the SOB and/or Inquisition get hella cool(er) anytime soon.
I've also realized that I have the 3 arguably evilest armies, does that make me a bad person :(

I've played Necrons for 7+ years with Chaos come a good 5 or so, I've dabbled in Orks minorly and even tried the 'Do it yourself' Marines back in 4th but only the first two ever stuck with me. Maybe it's the playstyle, maybe the models or maybe, just maybe I like playing the intended villains of a story, I'll never know.

The reason for different armies: There are only so many sets of SW power armour I can paint before I get bored.
