(yes, I know, it's this thread again, but it's not doing anyone any harm...)
It's continuing to be this fellow for me, languid and brooding badass. The motion and pose is flawless.
Some also rans:
I love the boobsnake... It's great.
The entire ork range, since it's rebirth, has been win. The model above really emphasises what I love about them, the dark humour. Nelson is a legend.
My jaw dropped when I first saw this, along with Urien Rakath and the entire reimagining of the dark eldar has continued in that vein, Jes Goodwin is worth his weight in gold.
Back in the day, this was my favourite...

Yes, that's an old metal dragon.
As in: the entire thing is lead, and the wings had to be made by yourself. They suggested tin foil.

Sigh.. because no one else has posted it thus far, may as well do it and be done with it
Generally, of course there are a few exceptions like the above, Nagash, Chaos possessed and the Ogre Cheerleader, I think GW has produced some stunning stuff over the years.
This is a good idea for a thread actually.. I find it hard to put my hand on one particular model. I would say the ones which had the most impact on me are probably the first edition Eldar range, and it was actually those models (along with the Jes Goodwin and Adrian Smith artwork in WD127) that convinced me to get into 40k.
More recently, of course the new Dark Eldar range, as a collection I think they probably rank as one of GW's most impressive accomplishments model wise.

I've gotta say the Deathmaster himself. The sense of movement from his cloak is amazing and holding three knives is just win.

I have absolutely no interest in DE, but that whole revamp might make them the most consistently excellent line they now have. GK are pretty good too with, er, one notable exception.

I don't understand why so many people think that model is so fantastic. It's good, but at the end of the day its just another suit of armour IMO. I'd say its the best Space Marine model, but I'd also say that I think that, in general, the Space Marines are the least visually inspiring race. They're all so similar.

This. It is a better than average model in a sea of blandness, two 4's and a 6 make the 6 an 8! It is called bookends!

Njal Stormcaller is a pretty sweet miniature, as well as Leman Russ.
The new BA line is really cool too.
Typhus though takes the cake for Large Suits of armor.
I have always loved the Yarrick model too.
